I'm envious...

Lucian has now lost 29 pounds!!! I haven't lost anymore... I'm the one that's going to have to wear a wedding dress in 95 days. I am really proud of him, but he's dwindling away.  He's going to have to modify what he's doing to gain more muscle. We're still trying to figure out what that's going to be. He needs to figure it out soon because at this rate he's going to weigh less than me by the time we get married.

I just found a GREAT yogurt. It is gluten-free and FAT FREE. Yoplait Greek 2x Protein Yogurt. At Winco, they have it with honey or with strawberry. I don't think I've tasted anything with zero fat and 14 grams of protein that is so good... and it helps with digestion. Can't beat it!!

I have no new recipes that we've tried lately, so nothing new there.  We're coaching our daughters T-Ball team, so I know we're going to find some quick and easy recipes to start making! I will keep you updated.

Quick post.

I did make the deviled egg recipe below. It came out really good! Had a nice avocado and lemon taste, and with the crisp prosciutto on top it made it even better! I would definitely make it as a nice alternative to the plain deviled eggs that people are so used to having.

It was really good!! I thought it was going to be a little salty, but when all was said and done, it tasted great!! I used what I had, which was tilapia, red onion, green olives (the kind for drinks, packed in vermouth), tomatoes (not roma, dont remember the name), baby bellas, fish sauce, EVOO, chopped jalapeño, salt, pepper, garlic powder and fresh garlic. It came out really good!! Give it a try!

I have a confession...

I haven't been the perfect "cave woman".. I have had so many cheat days lately, I gained a little weight back and had HORRIBLE indigestion for the past 3 days. Ok ok, I learned my lesson. I can't do THAT many cheats. I'm back on schedule now. For breakfast I just had coffee with a touch of organic 1% milk. I should have had more, but I still have bad indigestion.  For lunch, I had 2 eggs (tried to over easy them, but it didn't work too well), and an Andouille artichoke sausage with a detox tea. Not sure about dinner yet. I think it's time to try a new recipe.


Just came across this yummy appetizer I want to try:


Guacamole Devils


Ingredients (for 8 devils):
- 4 hard boiled eggs
- 1 avocado
- 2 teaspoons hot sauce
- 1 tsp lemon juice
- salt & pepper to taste
- 8 thin slices Prosciutto 

I'll post my results and modifications after I make it. Sounds delicious though!! I think I'll probably crisp the prosciutto a little bit so it's more like bacon on top.

Best. Snack. Ever.

Before I get to the snack.. I have to brag just a little. We started eating Paleo foods on January 11th. In ONE month, Lucian has gone from 210 pounds to 190 pounds. I can't believe he reached his goal of losing 20 pounds in a month and now is setting a new goal!! I am SOOO proud of him! I have lost about 8 pounds although it isn't coming off as easily for me, I'm not giving up! I'm about halfway to my original goal and I still have a month to go. I have "cheated" and given into a few cravings lately. I think that I have to give in about once a month or else I will go crazy and eat a dozen cupcakes at one time, so I'm ok with my slip ups. :)

So to the snack.... I can't believe I haven't thought about this the past month while eating Paleo. I love toasted seaweed.. well, tonight I came across a recipe for Kale Chips. We didn't have any kale, so I just put in whatever greens I have in my fridge (I think they were mustard greens) and followed the recipe. I ended up making two batches. For both of them, Pre-heat the oven to 300. Batch 1: In a bowl, toss olive oil, sea salt, and pepper. Spread out on a baking sheet and bake for 15 minutes. Batch 2: In a bowl, toss with apple cider vinegar, sea salt, and olive oil. Bake the same way. They come out sooo good! I saw that someone has tried it with brussel sprout leaves, that will be my next experiment! Here's the finished product:



Our first month is over. I will try to post more with great recipes that we try.

If you're just starting out eating Paleo, don't give up or get discouraged. There is SO much information on the web, just "google" what you're looking for and you will find an answer!

I Heart Cauliflour Mash!!

I can't believe I haven't had Cauliflour Mash before!! It's so good! Here's the recipe:

Cauliflour
2 T coconut milk
Hymalayan sea salt, to taste
Fresh ground pepper, to tast

First, I steamed the cauliflour until it was soft.. not too mushy though. Put it in a food processor, added about 2 tablespoons of coconut milk, fresh ground pepper and some Himalayan sea salt. I blended it until it was smooth. SOOOOO GOOD. Even my 3 year old loved it without any hesitation! You must try it!!

12 days down

We have completed 12 days of working out and eating Paleo foods. We gave ourself one cheat night, barely strayed off the diet and I felt like crap for at least 24 hours. I know that my body can't tolerate the processed foods and definitely not dairy, so I'm happy to stay away from them. This has been a great learning experience. It's interesting knowing what your body thrives off of and what weighs it down.

It's 3 days until our birthday and I think that I'm going to try to make us some Paleo cupcakes.. if it's even possible. Time to "google" and find out. I will post what ever birthday dessert recipe I end up making. Don't forget to check out other recipes in the recipe section of my blog.

For those who are curious about eating Paleo and how it works, I will tell you how we make it easy for us. We just recently got a Costco card, which has made it easier. They have a big bag of sliced beef, gluten free. They have pulled pork, gluten free.. and smoked salmon. All of it is pre made, you just warm it up! Can't be easier than that! We've even gotten those pre-made rotisserie chickens. We get what ever veggies that look good, and usually on sale at the grocery store, grab some fruit for a sweet snack every now and then, get some free range eggs and bacon, and we have meals for a week.

An easy day consists of an egg scramble and bacon for breakfast, a salad with what ever veggies you have on hand and whatever protein you have on hand with red wine vinegar as dressing. Then for dinner, protein, with veggies. We have been drinking a lot of water, which fills you up also. And on occasion, we make a frozen berry smoothie with almond milk. Delicious!

We had our first obstacle today!

My cousin is in town from Texas visiting us and her son for the next few days. So we went to the McDonald's Playground so that the kids could play and eat. I ordered a grilled chicken ceasar salad, no cheese, with a low fat balsamic dressing. It's as good as I could do in those circumstances, but I think I did pretty well! I even had 4 amazing looking cupcakes right in front of me, and I didn't even budge.

Lucian had dinner with some other firefighters tonight and they were cooking up a storm. He picked out the bits and pieces that he could eat and didn't cheat either!

I'm proud that we were able to make it through our obstacles without thinking twice. Seems like we're already making this a lifestyle change for us.

Tonight for dinner, I made an amazing Tomato Soup with Chicken! It was so delicious. I will post the recipe in the recipe section for you to see. YUM!

Day 6 is done. Our 2 rest days from working out were yesterday and today. Back to the grind tomorrow!
